Creamy Butternut Squash Soup

Fall is coming in quick and for a lot of us that means more warming and comforting foods. Soup is one of those foods for me. These days I’m all about recipes that have fewer ingredients and are easy to prepare. The creamy butternut squash soup hits all those points and tastes incredible. The leftovers will also keep well in the freezer for around six months.

Creamy Butternut Squash Soup

Ingredients:
1 medium butternut squash, peeled, seeded, and cubed (about six cups)*
1 medium yellow onion, cubed
1 tsp sea salt
1 tsp pepper
2 tsp chili powder
1 tbsp avocado oil or extra virgin olive oil
¼ cup heavy cream**
¼ cup sour cream**
3 cups warmed chicken stock or bone broth

*Peeling and cutting a butternut squash can be a pain, especially for those of us with joint pain. The good news is you can usually find already cut butternut squash in the produce section of most stores.

**Dairy free? You can substitute coconut cream or full fat coconut milk.

Directions:
1. Preheat oven to 400*.
2. Toss cubed squash and onion with avocado oil, sea salt, chili powder on a rimmed baking sheet.
3. Bake the squash and onions for about 30 min, or until tender.
4. Remove squash and onions from the oven. Add to high speed blender (or food processor) along with the broth, heavy cream and sour cream. Carefully blend until smooth and creamy. Place a kitchen towel over the top to hold the lid on and protect yourself from any hot steam. Hot liquids can explode when being blended so you may want to let cool for a bit, then reheat stovetop in a saucepan.
5. Taste, then season with more salt and pepper if needed.

To add some protein to this meal, but still keep it easy, we served it with a rotisserie chicken from the store.

Optional toppings:
Toasted pepitas
Croutons
Parmesan cheese crisps
Crunchy chickpeas
