Easy Spring Pasta

There are two kinds of people, those who love pasta, and those who are wrong. Okay, okay, I know not everyone loves pasta, and that’s okay, I just don’t understand it!

This pasta dish has been a favorite of ours for the past couple of years, we enjoy it best outside on the patio when the weather is just right.

Feel free to customize this dish to make it your own and fit your tastes!

Ingredients:

16 oz. gluten free or regular pasta of your choice
Good quality olive oil
Sea salt
2 cups cherry tomatoes, quartered
1 bunch of asparagus, trimmed and cut into 1 inch pieces
A few handfuls of arugula (swap spinach, fresh basil, or kale if you prefer)
Red pepper flakes
Fresh lemon juice
Shredded parmesan cheese
Optional: protein of choice. Grilled shrimp or chicken is tasty.

 

 

Directions:

1. Preheat oven to 400°

2. Bring a big pot of water to a boil. Once boiling, add some sea salt to water to add flavor to the pasta. Don’t be shy with the salt! Add a good couple of tablespoons at least.

3. While water comes to a boil and oven preheats, line a baking sheet with parchment, add the asparagus. Give it a good drizzle of olive oil and season with sea salt. Toss and bake 10-15 minutes, until bright green and just fork tender.

4. Meanwhile, cook pasta according to directions.

5. When pasta and asparagus are done cooking, add them to a bowl with the cherry tomatoes and a good drizzle of olive oil. Toss to combine.

6. Serve topped with a handful of asparagus, some red pepper flakes, parmesan cheese, a squeeze of fresh lemon juice. Taste and adjust seasonings as needed.
