Peppermint Hot Chocolate

Can you guys believe Christmas is only a week away?! Anyone else trying to finish up shopping for loved ones and wrapping all the gifts? Every year I say I’m going to start early, but every year I’m hustling at the last minute to get it all done.

Anyways, one of my favorite things is to sip on peppermint hot chocolate while listening to Christmas music and wrapping gifts. Peppermint and chocolate are one of my favorite flavor combinations and one of my favorite things about the holidays.

I’m into making my own so I can pick quality ingredients and control the sugar content. I’m all about balance and indulging in treats, but it’s so easy to consume more sugar than we mean to, especially this time of year. I don’t have CFRD, but I have been ‘borderline’ for years and in the last couple of years have had a few more blood sugar related issues so I try to watch my sugar intake and make smarter decisions around my sweet treats. This recipe is super easy, has minimal ingredients, and is pretty dang tasty.

Peppermint Hot Chocolate

You’ll need:
8oz of milk of choice (dairy or non-dairy, I used half coconut, half almond)
1 tbsp cocoa powder
½ tbsp pure maple syrup (you can adjust to taste)
⅛-¼ tsp peppermint extract - start with less, add more to taste. Peppermint is a strong flavor and a little goes a long way!
Optional: 1 scoop collagen (great for gut health, bone/joint support, and more)
You’re favorite hot chocolate topping - marshmallows, whipped cream, candy cane, etc.

Warm the milk to desired temp. Add cocoa powder, syrup, and peppermint extract. Blend in blender (a spoon just doesn’t work as well)*. Pour into your favorite mug, top with desired topping and enjoy!

*I have a small handheld milk frother that I use to mix it all up right in my mug. It works like a charm and means no blender to clean. They are super cheap and I’m sure you can find it one on Amazon.
