Salted Chocolate Peanut Butter Rice Crispy Treats

I love a good rice crispy treat and I also really love peanut butter, so I decided to combine the two and make this healthier peanut butter rice crispy treat topped with a chocolate drizzle and flaky sea salt.

When you’re looking for a healthier, delicious, and easy treat to make, these are it!

Salted Chocolate Peanut Butter Rice Crispy Treats

Ingredients:

4 cups brown rice cereal
1 cup no sugar added creamy peanut butter
¾ cups real honey
1 tsp vanilla
1 tsp cinnamon
¼ cup collagen (optional)
2.5 oz dark chocolate bar (or chocolate of choice)
1-2 tsp flaky maldon sea salt
Non-stick spray

 

Directions:

1. Place rice cereal in a large bowl.

2. Spray a8x8 baking dish with coconut oil, or non-stick spray of choice.
3. In a saucepan over medium heat melt the peanut butter, honey, and vanilla. Stir as it’s warming to mix it all together so it’s nice and smooth. Once it’s all well combined add the cinnamon and collagen, mix until creamy.
4. Carefully pour the peanut mixture over the rice cereal and mix carefully until the cereal is well coated with the peanut butter mixture.
5. Transfer the mixture to the 8x8 pan.
6. In a small bowl, melt the chocolate in 30 increments, stirring each time, until it’s melted and smooth.
7. Using a spoon drizzle the chocolate over the rice cereal mixture. This part is fun! Then top with sprinkle flaky maldon sea salt.
8. Let set up at room temp for about an hour or in the fridge for about 15 minutes then use a sharp knife to cut into squares. These keep best when stored in the fridge and will keep for a few days.


If peanut butter isn’t your thing, or you have an allergy, use can sub for a different nut butter. Almond butter or cashew butter would be amazing as well.
